Yummy Mummy Monday: Chocolate Pomegranate Bark

OK I think it's safe to say this one lives up to the word 'yummy'!!! This lil treat is adapted from one I found on finecooking.com (check it out here!)

Bark is a Holiday classic: it's simple & delicious and a perfect idea for those of you who aren't so culinarily inclined! ;) (say that 3 times fast!!!)

A great make- ahead treat to have for parties or give as an edible gift, this is sure to be a crowd pleaser!

Yummy Mummy Recipe:  Chocolate Pomegranate Bark

10oz bittersweet chocolate (finecooking recommends 60% cacao)
Arils (seeds) from one large pomegranate
1/4 tsp sea salt (fine not coarse)

Line a baking sheet with parchment paper
In a double- boiler (or a pyrex jug in a pot of boiling water!) melt chocolate. Stir and melt until smooth
Add half of the pomegranate seeds & salt & mix well
Pour mixture out onto baking sheet & spread evenly; top with remaining pomegranate seeds & allow to cool (you'll probably have to pop it in the fridge for approx 30 min)
Break into pieces approx 2" big & enjoy!

Best served fresh!
