Yummy Mummy Monday: Festive Bevvies!

It's time to let loose, unwind, and relax (at least once the kiddies are in bed!!!). Whether you are seeking a festive buzz or a non- alcoholic concoction this Christmas, I've got something to help you enjoy the Holidays! Bottoms up ladies!!! ;) 

Cookie Ice Cream Shots



Ingredients:
  • Two scoops of Christmas cookie ice cream (or break up sugar cookies & mix with vanilla or candy cane ice cream!)
  • White sprinkles
  • Syrup
  • 1 ounce white creme de cacao and 1 ounce creme de menthe (for alcoholic)
  • 5 drops of green food coloring and two ounces of milk (for non-alcoholic
To Make:
  • Rim the glasses, first by dipping in the syrup, then into the sprinkles- set aside and allow to set
  • In a blender, mix all other ingredients
  • Pour into glasses & serve with a festive straw or candy cane


Peppermint Ice Cream & Hot Chocolate Affogato



Ingredients: (serves 4)
  • 14-ounce can regular coconut milk
  • 14-ounce can light coconut milk
  • ½ cup honey
  • 1 teaspoon vanilla
  • 2 teaspoons peppermint extract
  • 3 tablespoons cocoa powder
  • 2 tablespoons honey
  • ¼ cup water
  • ¼ teaspoon cinnamon
  • 2 cups soy milk (or milk)
  • Irish cream liqueur (optional for alcoholic version)
  • Peppermint candies (a few for garnish)
To Make: 
  • A few hours prior to serving, make the ice cream: In a medium bowl, whisk together 2 cans coconut milk, ½ cup honey, 1 teaspoon vanilla, and 2 teaspoons peppermint extract. Freeze the mixture in an ice cream maker (or make it without the machine). When complete, freeze the ice cream for around 2 to 3 hours to obtain a hard texture. (You can also use pre- made ice cream!) ;)
  • In glass 2-cup measuring cup, place 3 tablespoons cocoa powder, 2 tablespoons honey, ¼ cup warm water and ¼ teaspoon cinnamon (if using). Microwave for about 20 seconds to heat briefly, then whisk or stir together until combined.
  • Add a bit of the soy milk and whisk it in to temper the mixture. Once it is incorporated, add the remainder of the 2 cups of milk.
  • Microwave for 2½ to 3 minutes until hot, or for the stovetop method, heat the mixture over medium heat until hot, taking care that it does not boil.
  • To serve, crush the peppermint candies. Place a scoop or two of ice cream in a bowl or glass, then sprinkle with peppermint candies. At the table, pour hot chocolate & Irish cream liqueur  over the ice cream. Enjoy!

Blue Sparkling Star


Ingredients

  • 2 ounces orange infused vodka
  • 2 ounces blue curaçao
  • Champagne


To Make: 
  • Rim 2 champagne glasses with blue cocktail sugar
  • Pour 1 ounce orange infused vodka into each of the prepared champagne glasses
  • Pour 1 once blue curaçao into each into each of the prepared champagne glasses
  • Top up each glass with champagne

Sparkling Sangria



Ingredients:

  • Sparkling juice, lemon- lime soda, or carbonated water (depending how sweet you want it)
  • Orange juice
  • Apple slices
  • Orange slices
  • Frozen grapes
  • Peach schnapps (optional for alcoholic version)

To Make:
  • Mix the carbonated drink of your choice with the orange juice (and schnapps, if using)
  • Add orange & apple slices, and frozen grapes
  • Garnish with a candy citrus slice
