Yummy Mummy Monday: Shortbread!

This recipe is a staple in our baking at Christmas and one of my favourite traditions. For as long as I can remember, my Mum and I have baked shortbread for the Holidays- and one batch is never enough! These cookies are simple, classic, & melt in your mouth delicious. Enjoy. <3

Yummy Mummy Recipe: Shortbread


1 lb soft butter
1/2 cup cornstarch
1 cup sifted icing sugar
3 cups sifted all purpose flour


Preheat oven to 350 degrees
Cut butter into cubes and whip in a mixer on low
Add cornstarch & mix until blended together; gradually add sugar & icing sugar
Mix until combined & remove dough from mixer and form into a ball (dough will be quite dry, but should hold together)
Flour your surface & rolling pin (very important, as this dough will be difficult to remove without it)
Take approx half the dough & roll to 1/4" thick
Use cookie cutters & place on a parchment lined baking sheet; place 1/2" apart
Bake for 8- 10 minutes, or until edges are just turning golden- watch very carefully! (because of all the butter, these cookies can turn brown very fast!)
Allow to cool for a few minutes on a cookie sheet before removing to decorate (the cookies will be quite brittle and may crack/ break if you try to move them too soon after removing them from the oven)
Decorate to your preference & enjoy!
