Yummy Mummy Monday: Gold Medal Game Pancakes

In honour of Team Canada making it to the Gold Medal Game in the Olympics, I thought I'd pick something to accompany the 4am wake up call us here in Vancouver had in order to catch the game. That is, for those of us that didn't pull all- nighters. ;) How about some yummy pancakes served with something us Canadians are famous for- real maple syrup? (if you've only ever had the imitation stuff, buck up and splurge on some of the real thing, it's worth it!).

So in honour of the boys representing Canada on the ice here's a classic brekkie perfect to wake up to- even at 4 in the morning!



Yummy Mummy Recipe: Gold Medal Game Pancakes
Gluten free/ dairy free version also below

1 1/2 cups all purpose flour
3 tbsp sugar (I usually skip this)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 3/4 cup buttermilk*
1 egg
2 tsp vanilla
1 tbsp canola oil (use only if not cooking on a non- stick surface)

*You can make your own buttermilk by using 1 3/4 cup milk & 1 3/4 tbsp lemon juice; combine and let stand for 5 minutes before using, stir and add to recipe

Gluten free/ Dairy free version


1 1/2 cups gluten free flour
3 tbsp sugar (I usually skip this)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 3/4 cup coconut milk (or your preference of non- dairy milk)
1 egg
2 tsp vanilla
1 tbsp canola oil (use only if not cooking on a non- stick surface)

Directions:

1. In one bowl, mix dry ingredients; in another, whisk together wet
2. Combine, stirring constantly to avoid lumps (I found the GF version thicker, so you may need to add more milk)
3. On a hot pan or skillet, scoop out 1/2 cup scoops; flip when golden brown
Serve with genuine maple syrup and your favourite toppings.
