Yummy Mummy Recipe: Moroccan Lemon Chicken

For the last little while our kitchen has been undergoing a 'mini' reno (as these things tend to go, it has been a bigger project than we originally thought it would be). This has meant pre- planning meals & slow cooker recipes. A few weeks ago at the North Delta Winter Market I met the family behind BC Bud's Garlic (not to be confused with another infamous BC crop) and had the pleasure of cooking with some of their fresh garlic- amazing! After gushing to them about how much I loved their locally- grown bulbs, they kindly gave me one of their garlic spice mixes to try. With our kitchen being in chaos I thought this week was the perfect opportunity to try the Moroccan Lemon Dinner spice mix with chicken in the crock pot. I loved that the shopping list & instructions were included, making this dish both delicious and fool proof. The ingredients were simple but the mix made them into an amazing meal we can't wait to have again. Yummy Mummy Recipe: Moroccan Lemon Chicken

Ingredients:
1 packet BC Bud's Moroccan Garlic Spice Mix
2 lb chicken (bone- in)
1 tbsp honey
1 onion, chopped fine
juice from 1/2 a lemon
2 cups chicken broth
1 can chick peas, drained & rinsed
2 tbsp parsley, chopped fine

Directions (oven)
1. Preheat oven to 350 degrees
2. In a large saucepan, combine spice mix, honey, onion, lemon juice & chicken broth; stir until mixed well
3. Place chicken & spice/ broth mixture in a casserole dish or other oven- friendly pot with a lid; cook for 60 minutes, or until chicken is cooked through
4. Add chick peas & parsley & cook for another 10 minutes

Directions (crock pot)
1. In a large saucepan, combine spice mix, honey, onion, lemon juice & chicken broth; stir until mixed well
2. Pour mixture into crock pot along with chicken & chick peas; cook on low for 6- 8 hours or on high for 3- 4; add parsley right before serving

Great served with basmati rice, Yukon gold potatoes, yams, or noodles (we enjoyed ours with rice)
